Eduardo Tocto’s 6-hectare farm in Palanda, southern Ecuador, grows about 3,000 Typica Mejorado trees on fertile Amazonian soil. The coffee is processed using a washed method with anaerobic double fermentation: 48 hours in cherry, 72 hours in mucilage, then washed and dried on African beds for around 20 days.
