What Skittle Lane say
The cherries are hand-picked at peak ripeness and are transported to a friends wet mill because Victor doesn't have his own wet mill. The cherries are de-pulped and are the parchment with mucilage is put into plastic barrels for slight fermentation for 72hrs. After, the parchment with mucilage is put on a concrete floor called a 'patio' to dry for around 10 days.
