Founded in 2018, Ivan Solís Micromill is a family-run business led by Ivan Solís Rivera and the Solís Cordero family in Santa María de Dota, Costa Rica. It was established to sustainably grow, process and market specialty coffee while celebrating the distinctive character of the region.The farms supplying the micromill sit at high elevations in the Los Santos area, where fertile soils support both coffee and avocado cultivation.
Known for its exceptional coffees, the region also includes extensive conservation areas that protect its natural landscape and attract visitors.Careful fruit selection and a diverse range of processing methods are central to the micromill’s approach. Washed, semi-washed, honey, natural and anaerobic natural processes allow the family to develop coffees with distinct flavour profiles, highlighting the sweetness, citrus brightness and fruit notes associated with Santa María de Dota.Through its Sagaz Coffee brand and dedicated roasting facilities, the business also brings locally produced specialty coffee to Costa Rican consumers.
Sustainability remains a core priority. Sagaz Coffee holds the Esencial Costa Rica licence and NAMA Coffee certification, and participates in Green Growth and Low Emission Incentive programmes through organisations including PROCOMER and ICAFE. These commitments support the family’s focus on quality, environmental responsibility and sustainable development.
