Finca San Isidro is owned and operated by Don Fabio Caballero, assisted in its management by his daughter, Marysabel, and her husband, Moises. In 2016, the family claimed first place at the Cup of Excellence (COE), securing a record price of USD 120.50 per pound. In recent years, Don Fabio’s grandson, Fabio Jr, has stepped into farm management and processing, carrying the family’s work into its next generation. In 2025, he entered his first commercial harvest into the COE, taking first place with a washed Geisha.

This lot in particular is curated by Don Fabio. Following harvest, he dries the coffee in Guardiolas, mechanical drum dryers held at a low 40°C for 60 - 70 hours. With limited sunlight and high humidity throughout the harvest, conventional drying carries persistent uncertainty. The Guardiolas maintain a slow, consistent rate across the entire lot, reducing the risk of mould and preserving the coffee’s condition well beyond the immediate season. It is a controlled method refined through necessity, and one proven to extend the shelf life of coffees produced across the family’s farms.

This is Geisha: the delicate Ethiopian landrace, coveted for its rarity, structure and distinct clarity. Grown at 1,800 MASL at San Isidro and subjected to a washed process, the defining characteristics of this low-yielding variety remain unaltered.
