What Blue Sky Coffee Roasters say

This Parainema lot comes from Sabio, the Ferrufino family’s vertically integrated operation in Nicaragua. By growing, processing and exporting directly from their own farms, Sabio is able to keep a close eye on quality from start to finish, producing coffees that are clean, consistent and great value.

This is a relaxed, easy-drinking washed coffee with the kind of balance and sweetness we love from Nicaragua. The processing keeps things clear and approachable, letting the varietal and terroir do the heavy lifting rather than pushing too far into the experimental end of the spectrum.

In the cup, it is sweet, soft and stonefruity, with notes of nectarine and apricot. It has a gentle acidity, a smooth structure and a really easygoing profile that should suit a wide range of brew methods. A nice everyday single origin: clean, friendly and very drinkable.
