Named after Faysel Abdosh Yonis, the founder of Testi Specialty Coffee, this project reflects his focus on carefully sourced, high quality Ethiopian coffee. The Faysel Abdosh Project is a washed coffee from the West Guji zone.

This lot comprises mixed heirloom varieties and is processed using Testi’s triple fermentation protocol, a method that reflects the company’s emphasis on precision and quality throughout processing.

Selectively harvested cherries, comprising approximately 90% optimally ripe and 10% overripe fruit, are first density sorted to remove low density cherries. Whole cherries then undergo 24 hours of anaerobic fermentation. After depulping, the parchment is dry fermented for a further 12 hours, followed by an additional 12 hour fermentation with a controlled volume of cold water. The final stage is monitored to reach a pH of between 3.8 and 4.0. The coffee is then gently agitated and drained before being transferred to elevated African drying beds. Drying takes place under controlled conditions at 23 to 25°C, encouraging gradual moisture loss and helping preserve the parchment’s structural integrity.

This precise, multi stage process creates an immaculate washed coffee with depth, clarity and layered complexity.
