What Five Senses Coffee say

Honey processing offers a beautiful middle ground between the clarity of washed coffee and the fruit sweetness of a natural. Leonid Ramirez uses this method to highlight the expressive character of his coffee from the mountains of Génova, Quindío. During drying, a portion of the fruit mucilage is left on the beans, gently building sweetness and texture while preserving balance in the cup. Across the eight years we’ve worked together, Leonid has continued refining both his farming and processing techniques. This honey lot shows that thoughtful evolution in action. The cup is elegant and comforting, revealing flavours of peach, delicate black tea and the lingering sweetness of mānuka honey.
