Eloy has learned that Gesha demands exceptional care and attention, and has found the variety performs best during cooler, wetter months, when higher mucilage content enhances its signature aromatics. He also maintains bee colonies, recognising the role pollinators play in improving plant health and fruit quality.
Mi Refugio is Eloy Gutiérrez's farm in Timaná, Colombia, where roughly 0.5 hectares are now dedicated to cultivating Gesha. The cooler, wetter conditions here encourage higher mucilage content, drawing out the variety's signature floral aromatics.
Silky and tea-like, this coffee is light on the palate with a bright, sparkling acidity that lifts quickly rather than lingering too long. Jasmine and coffee blossom at the start carry through to a clean, evolving finish, offering layers of complexity as the cup cools.
Brewing Notes: Try starting with a 1:16 ratio and a coarser grind to highlight floral notes, and increase flavour clarity.
