What Parallel Roasters say

Hallo Biriti comes from the Gedeb area of southern Ethiopia, near the village the lot is named after, where around 1850 to 2200 masl the high elevation and slow cherry maturation help build sweetness and clarity in the cup. Produced by smallholder farmers in the surrounding area, this lot is naturally processed, with whole cherries dried to enhance its fruit-driven character.

In the cup, it’s vibrant and expressive with plenty of sweetness and a balanced acidity. Served black, it shows notes of mango, blueberry, and red grape, giving it a juicy, layered profile. With milk, it softens into a rounder, creamier cup, with a flavour reminiscent of mango ice cream.
