BACKGROUND: Nestled high in the renowned coffee-producing municipality of Pitalito, Huila, the El Diviso Estate consistently produces some of Colombia's most exciting and innovative micro-lots. Grown at an impressive 1750 meters above sea level, this distinct harvest features a carefully cultivated blend of Typica, Castillo, and the highly prized Pink Bourbon varietal—a rare hybrid celebrated for its exceptional sweetness and complex cup profile.
The true magic of this coffee lies in its Anaerobic Washed processing method. By fermenting the coffee in a carefully controlled, oxygen-free environment prior to the traditional washing process, the producers have unlocked a brilliantly vibrant and multi-layered flavor profile. Roasted specifically for espresso, this coffee shines in the cup, opening with the delicate floral aromatics of orange blossom, transitioning into the bright, juicy sweetness of ripe peach, and rounding out with a rich, creamy butterscotch finish.
