What The Maillard Project say

Eduardo Tocto owns a 6-hectare farm near Jesús del Gran Poder in the Palanda subregion of Zamora Chinchipe, southern Ecuador. Established in 2019, the farm reflects Eduardo’s passion for coffee and his commitment to passing that passion on to his daughters. His daughter recently placed second in the regional Bracamoros Coffee Competition.Located in the fertile Amazon region near Podocarpus National Park, Palanda is renowned for its rich agricultural land and is considered the birthplace of cacao, with evidence of cacao use by the Mayo Chinchipe people dating back around 5,000 years.

The farm is home to approximately 3,000 Typica Mejorado trees. The coffee undergoes a washed process with an anaerobic double fermentation: 48 hours in cherry followed by 72 hours in mucilage. After washing, the coffee is dried on African beds for around 20 days.Eduardo continues to refine his processing methods to further improve quality, while also planning to introduce additional varieties and expand the farm’s coffee offerings.
