What The Maillard Project say
Patio Bonito is a family-run farm in Caldono, Cauca, Colombia, founded by Carlos Arturo Trujillo, who has dedicated nearly 50 years to coffee farming. Today, he works alongside his daughter, Paola Trujillo, continuing a family legacy built around quality, innovation, and a deep connection to the land.Paola returned to the farm in 2022 after years working as a cupper and coffee buyer in Nariño and Huila. Her experience has played an important role in refining the farm’s fermentation and processing methods, introducing innovative techniques such as thermal shock and anaerobic fermentation across both washed and natural coffees.
The 11-hectare farm has 9 hectares dedicated to coffee, with approximately 47,000 trees across 13 varieties, including Castillo, Colombia, Pink Bourbon, Gesha, Typica, SL-28, Red Bourbon, Java, Sidra, Pacamara, Laurina, and Wush Wush. The Trujillo family’s approach is guided by three core values: food security, soil conservation and management, and coffee cultivation. Their commitment extends beyond producing exceptional coffee, with a mission to share knowledge and promote responsible management of natural resources and the environment. For the Trujillo family, coffee is more than a livelihood—it is a legacy to be passed on through generations, built on love, knowledge, and care for the planet.
Bourbon Ají is an Ethiopian landrace variety that is becoming increasingly popular among Colombian coffee producers. Its name, meaning “chili pepper” in Spanish, refers to the variety’s distinctive peppery aroma and, in some coffees, a subtle pepper-like flavour.
