Hacienda La Union in Costa Rica is cared for by Alejo Kahle Castro, a fifth-generation coffee producer whose family has managed the farm since the 1840s. Alongside their other farms, Volcán Azul and Hacienda Colima, the family combines generations of experience with a dedication to quality and innovation. Their work has earned multiple placements in Costa Rica’s Cup of Excellence competitions.This Villa Sarchi coffee brings together the deep sweetness of ripe grapes and the tangy brightness of blackberries
A rich maple syrup sweetness rounds out the fruit notes, creating a layered cup with a long, lingering finish.Processing begins after harvest, when the cherries are pulped using a centrifuge while retaining 100% of their mucilage, the naturally sweet layer surrounding the beans. The coffee is then held in plastic bags for 24 hours before entering a drying period of approximately nine to twelve days.
Throughout this stage, the beans are stirred regularly during the day and covered overnight to prevent exposure to excess humidity. They then undergo low-temperature mechanical drying, with resting periods between cycles, until the desired moisture level is reached. This carefully managed process complements the family’s longstanding focus on bringing out the character of each coffee.
