What Edition Roasters say
Deep sweetness of ripen grape and tangy notes of blackberry merge enchantingly in this coffee from Hacienda La Union in Costa Rica. Coated by a thick layer of maple syrup sweetness, these fruit notes linger forever!
After harvest, these Villa Sarchi cherries are put through centrifuge to pulp and kept in plastic bags for 24hrs with 100% of mucilage still intact. Then these are stirred regularly throughout the day and covered to avoid excess humidity over night for 9~12 days. Then they are mechanically dried on low temp with rests in between to reach desired moisture.
Alejo Kahle Castro is a fifth generation producer whose family has been looking after Hacienda La Union since the 1840s. Alongside his other farms, Volcan Azul and Hacienda Colima, the Castro family has been landing multiple places in Cup of Excellence competitions through dedication to quality and innovation.
