Grown high in the mountains of Santa Rosa, Southern Guatemala, El Boqueron is a model of precision in terms of processing, from the picking of perfectly ripe coffee cherry, to slown drying to reach optimal moisture. The result is a complex and vibrant cup full of fruit notes and satisfying weight.
Located in the southern mountainous region of Guatemala the Santa Rosa region is home to 250 small holder farmers who contribute to this Boqueron coffee. The farmers harvest between December and February, ensuring the crop is at its peak ripeness. After removing any small sticks and leaves, the cherry is sun dried on patios until a desired moisture content of 12% is reached. Roasted light for filter, this coffee is best savoured thoughtfully as layers of complexity reveal themselves in the cup. The balance of weight and sweetness is a testament to immaculate processing and careful roasting.
