Minas Gerais is the high, rolling heartland of Brazilian coffee, a state of red earth and long dry seasons that yields more specialty cherry than any other region on the continent. Its plateaus rise high enough to slow the ripening and turn cold enough by night to draw the sweetness up from within, old ground that has given up its harvest season after season like an offering.
This lot is the work of Fabiano Ribeiro Dias at Fazenda Boa Esperança, drawn from the Catucaí varietal, a hardy Brazilian selection prized for the body and deep sugar it carries beneath the unforgiving highland sun. The cherry is taken only at full ripeness and laid down to dry slowly, the grower's patience a quiet devotion that settles a clean, heavy sweetness into the seed.
Natural processing, the whole cherry left intact so its sugars bleed inward and consecrate the bean before hulling. It is the method that gives this lot its character, a soft apricot nectar and ripe guava drawn through a finish of peanut brittle, round and sweet with the weight that only a patient Brazilian natural can summon.
