ABOUT ME In the rolling hills of the Serra da Mantiqueira, to the south of Minas Gerais, lies one of Brazil’s most celebrated coffee regions. Known for its lush landscapes, misty mountain air and deep-rooted coffee heritage, this area has become synonymous with quality and consistency - home to many of Brazil’s most awarded producers.
This Yellow Bourbon lot comes from members of Cooperativa COCARIVE, based in the town of Carmo de Minas. The cooperative is made up of a small group of passionate, multi-award-winning producers who share resources, knowledge and a collective commitment to exceptional quality. Their coffees consistently shine on both national and international stages, representing the very best of Brazil’s specialty coffee movement.
Alex has a special connection to this region - it was here, in Carmo de Minas, that he took his first ever journey to origin back in 2016. That trip ignited a love for coffee at its source: the people, the farms, the care behind every harvest. Over the years, he’s returned many times, building friendships and a deep respect for the producers whose dedication defines Mantiqueira’s reputation.
The coffee itself is classic Mantiqueira: 100% Yellow Bourbon, celebrated for its natural sweetness and clarity. In the cup, it’s super sweet and impeccably balanced - notes of cherry, rich dark chocolate, malt and almond with a creamy body that speaks to the variety’s elegance. Smooth, comforting and endlessly drinkable, it captures everything we love about Brazil’s warm coffee heartland.
Brew temperature: 93.2ºC – 93.7ºC Dose: 21g Brew weight: 42g Brew Ratio: 1:2 Brew time: 26 - 32 sec
This recipe was developed on a La Marzocco Linea using 20g baskets and should be taken as a starting point, not set in stone as different machines extract in different ways. Have fun experimenting.
