From your web site I could not sort out what I require, I want Coffee that tastes like Coffee, not a fruit farm. I drink my coffee black not a dairy product.”
Okay, we admit it—when we first took over Blue Sky, we didn’t fully appreciate the value of a true dark roast coffee. Razorblade fixes that. It’s our answer to those who want just coffee—big, bold, unapologetic flavour—because “just coffee” is more than just coffee.
Razorblade is an old-school Italian-style dark roast: full-bodied, intense, and deeply roasty, with a malty, bittersweet edge that lingers in every sip. It’s coffee-flavoured coffee—never generic, always classic. We select beans that can handle the heat, like our current fully washed Rwandan lot, and take them low and slow over a 15-minute roast. Once the beans start to smoke, we give them a little extra time to draw out that rich, roasty depth and develop a smooth, oily finish.
This blend isn’t about showcasing origin—it’s about the roast. The result is a strong espresso blend that cuts through even the biggest mugs of milk, delivering a coffee-dominant profile with caramelised, slightly smoky undertones. Black coffee drinkers will appreciate its punch and presence; milk drinkers will love its ability to stand up in a latte or cappuccino. Old-school espresso fans might even find it strong enough to make the spoon in your cup stand on its own.
Every now and then, even those of us who enjoy the brighter, fruit-forward coffees find ourselves coming back to Razorblade—for that nostalgic, Italian-style hit that reminds us why we started drinking coffee in the first place.
