What Cavalier Coffee Roasters say
Coffee Story
The morning mist over Trujillo clears to reveal the deep crimson cherries of the Mandela variety, a hybrid born of curiosity and perfected by the Herrera family’s vision. After a patient 168-hour anaerobic slumber, this coffee emerges with a profile as bold and theatrical as a summer sunset.
The first sip is a celebration, opening with the festive, wine-like warmth of sangria and the concentrated sweetness of sun-ripened black plum. Just as the richness takes hold, a sharp, electric spark of finger lime cuts through the fruit, providing a citrus pop that dances across the palate.
The experience finally settles into a long, luxurious finish of decadent dark chocolate, leaving behind a velvety weight that lingers like the memory of a perfect harvest.
