This lot was collected and processed by Cata Export, each of the producers involved supplied Caturra coffee cherry grown on their farms. All the fruit was processed in the same fashion: one day of rest after pulping, then 70-80 hours of anaerobic fermentation. This method highlights a pronounced lemonade/passionfruit acidity on top of some toffee sweetness, we love this coffee as a filter or long black, or as a short milk drink.

We came across Cata Export at a cupping run by Agnese, and were excited to taste their coffees – including coffees from El Diviso, run by the noted producer/processor Nestor Lasso. In addition to acquiring some Ombiglon from his estate, we purchased this regional lot from Cata, who work with producers in the Tolima Department, processing their Caturra cherries using the same method on each farm: pulping and resting for 1 day, followed by anaerobic fermentation for 70-80 hours before washing the result.

On top of a classic toffee apple profile, the processing elevates the acidity, with notes of passionfruit and lemonade. We love this coffee as a filter or long black, or as a short milk drink.
