Colombian Coffees / COLOMBIA – EL INDIO – TOLIMA – NATURAL PROCESS
Produced by our coffee partners in Tolima, Colombia, this natural lot comes from a network of around 175 farming families. Since 2019, we have worked closely with growers to provide technical support in natural processing, and today more than 80% of production across the group is processed this way.
Tolima is one of Colombia’s most important coffee regions, defined by its high-altitude mountains, cool climate, and volcanic soils. It is also a consistent presence in the Cup of Excellence, reflecting the region’s outstanding quality potential.
This coffee is Caturra, a natural mutation of Red Bourbon originally from Minas Gerais, Brazil, known for its productivity and resistance to disease. After selective harvesting, ripe cherries are carefully sun-dried on raised beds or patios, with regular monitoring throughout the day to ensure even drying and stable moisture development. This traditional natural process enhances sweetness, complexity, and aromatic depth in the final cup.
