**FOR USE WITH MILK**
This is our staple coffee for pairing with milk. It is a coffee that was produced by a small group of female coffee producers, they have formed a cooperative in order to better market their coffee and create more financial autonomy. Their main form of income is their coffee and we plan to purchase each harvest for our cafe, Brighter in Stanmore, Sydney. Each year we will work to grow closer and make sure we are adding value to the supply chain. We wanted to partner with them because we see that they want to see a real future in coffee and that means making some real changes in the way coffee is traded. Being a single lot from quite a small area we see unbelievable consistency and it is a joy to work with on the espresso machine because of this. We created a roast profile that tries to balance the beautiful acidities to be sweet and harmonious with milk, with mild fruity characteristics.
Espresso Recipe: 1:2.5 ratio
In: 21 grams dry dose
Out: 52 grams beverage weight output
