What The Maillard Project say
Mr. Jose Uribe Lasso established El Diviso Farm in the Normandia neighbourhood in 1997. Driving time from Huila's Brucellas, Pitalito region of Colombia is roughly 30 minutes. The farm, which covers roughly 14 hectares and is located at 1770 masl, only harvests once a year, from October through December. Jose urged his three boys, Jonathan, 29, Adrian, 25, and Nestor, 23, to get active in farm management and production by the year 2022. The three sons are actively promoting the newest production techniques with great enthusiasm. The family is experimenting with anaerobic fermentation, lengthy fermentation durations, oxidation, and the reapplication of mucilage fluids to the cherry during processing.
Sidra is largely produced in South America, primarily in Ecuador and Colombia, while having genetic ties to Ethiopia. The cultivar grows at an altitude of 1,650–1,800 metres. Sidra plants can reach heights of up to four metres and have particularly thick trunks. With cherries that grow closely clustered together along its branches, they produce dark green leaves, elongated five-petal blossoms, and dark green leaves. In comparison to other arabica cultivars with pointed ends, the cherries are also bigger and rounder. The Sidra variety's seeds (or beans), which are comparable to Gesha in shape, are often longer and thinner than most arabica kinds.
