What The Maillard Project say

Finca San Pedro is a third-generation family farm located in the mountainous region of Tolima, Colombia. Since 2011, the Monroy family has focused their work on producing specialty coffee, combining traditional farming knowledge with modern innovation. Initially cultivating Castillo and Caturra, the farm expanded its varietal portfolio in 2015 to include Tabi, Pink Bourbon, and Geisha. Today, San Pedro continues to experiment with new varieties through dedicated nurseries, allowing the family to explore the full potential of Tolima’s terroir.

Owned and managed by Milton Leonardo Monroy, the farm reflects a deep connection to agriculture that began with his father and continues through the entire family. Their collaborative approach ensures that each stage of production is guided by both heritage and forward-thinking practices. Sustainability plays a central role at San Pedro, where coffee cultivation is balanced with forest conservation to preserve the surrounding ecosystem.

The coffee is produced using a semi-washed process designed to highlight clarity and aromatic complexity. Carefully handpicked ripe cherries are first depulped before undergoing a controlled partial fermentation. This method enhances delicate floral aromatics while preserving bright citrus characteristics. After fermentation, the parchment coffee is sun dried on raised beds, allowing for slow, even drying that maintains sweetness, structure, and clarity in the final cup.Through this meticulous approach, San Pedro expresses the elegance of its varieties and the distinct identity of Tolima resulting in a vibrant, layered cup that reflects both the land and the people behind it.
