Masina Nitrogen Indigo 2725 is a vibrant expression of Ethiopian “garden coffee,” grown in the backyards of smallholder farmers and nurtured through meticulous hand-crafting at every stage. Only ripe, red cherries measuring 20–22º Brix are selected, ensuring sweetness and optimal ripeness from the very beginning.Once harvested, the cherries are placed into sealed tanks filled with nitrogen, a process that removes oxygen and creates a controlled anaerobic environment. Inside these tanks, temperature, humidity, and yeast activity are carefully monitored.

This precision-fermentation is what shapes the coffee’s distinctive Indigo profile—a flavour spectrum characterised by clarity, brightness, and expressive fruit notes.After fermentation, the coffee is pulped, washed, and transferred to raised beds, drying slowly for 15–20 days to lock in structure and complexity. To maintain exceptional quality, our local partners perform an extensive QC regime, including a triple pass through colour sorters and another triple hand-sorting to remove any defects.Finally, Project Origin cup and select the very best lots, collaborating with Primrose to curate this standout 2725 Indigo release—a coffee that brings together innovation, tradition, and the unmistakable character of Ethiopian terroir.
