What The Maillard Project say

Volcán Azul is a family-run coffee farm in Costa Rica, built on a heritage of coffee production spanning more than two centuries. Its story connects two pioneering growers, Alejo C. Jiménez in Costa Rica and Wilhelm Kahle in southern Mexico, whose shared ambition was to produce exceptional coffee for the European market.Today, their descendants continue this commitment to quality, with Volcán Azul managed by Alejo Kahle Castro. His focus on innovation and careful production has helped the farm earn recognition in the Cup of Excellence competition, including second place in 2017.

Coffee grows in fertile volcanic soils at elevations above 1,400 metres, providing favourable conditions for developing distinctive flavours. The family cultivates varieties including Caturra, Geisha, SL28, Villa Sarchi and Mocca, producing carefully selected micro and nano lots through washed, honey and natural processing.Environmental conservation is central to the family’s approach. Since the 1980s, they have acquired more than 1,500 hectares of tropical rainforest for protection, including land surrounding their coffee farms and areas in Costa Rica’s biodiverse Osa Peninsula.

By preserving these forests, the family supports biodiversity and safeguards natural resources, continuing a legacy that brings together exceptional coffee, responsible land stewardship and a commitment to future generations.
