Recommended Recipe: Los Cuarteles Micromill sits in the highlands of Tarrazú, within the micro-region of San Pablo de León Cortés.

Operated by producers Mario Araya Mora and Freddy Araya Mora, the mill brings together cherries from a collection of small, high-elevation farms including El Dragón Junior, Carteles, Ojo de Agua, Don Chayo, Montes de Oro and Las Nubes.

Ranging from 1700 to 1885 masl, these farms benefit from cool temperatures and slow cherry maturation, supporting dense, flavour-rich coffees.

The focus at Los Cuarteles is on careful processing and separation of lots, allowing each varietal—Catuai, Caturra, Geisha and Villa Sarchí—to express its character with precision. The result is a clean, structured profile typical of Tarrazú, with layered sweetness and a balanced finish.
