Pablo Chuy Flores is the fourth generation to tend to the crops at Linda Vista, overlooking Santa Rosa's ancient volcano crater lake, Laguna de Ayarza. The family estate was established on these fertile slopes by his great-grandparents in the 1900s, carried on by grandparents and then his own dad. These days, Pablo leads about 25 full-time workers and 50-75 during their harvest that runs each January to March. Accommodation, amenities, general medical and transport services are provided for the workers, as well as school programs for the wider community's children.
Linda Vista is highly regarded in the area due to its efforts in reforestation, with 110 hectares protected bio reserve and strict water conservation practices, proving the estate to be an enduring showcase for Rainforest Alliance. They are a pillar of socio-economic sustainability to the region, providing high prices to buy and process the coffees of neighboring farms in their wet mill.
The drying for this washed lot has occurred on patios, where coffee is diligently raked 15-17 times per day to ensure even drying is guaranteed over the 8-12 day period. In all steps of preparation, no corners are cut. The family legacy - dedicated to sustaining quality, social and environmental riches - is upheld, as Pablo prepares the way for a 5th generation to pick up the mantle.
