This lot comes from 40 small producers of San Ignacio, Cajamarca In northern Peru. We have only been discovered coffees from Cajamarca in recent years and fall a little more in love every time. The area is well established and perfectly suited for quality coffee production.
This if a fully washed coffee which was pulped on the day it was picked before an anaerobic fermentation of around 30 hours. Coffee was then dried for between 12 and 20 days until perfect dryness was achieved.
Growers of this coffee live in close proximity to some natural conservation areas such as Señor de Huamantanga forest, Cutervo National Park, and the Tabaconas National Sanctuary. It is a bird from this area that gives this coffee its name. Gallito de la Rocas is an important and endangered bird and well worth a google as it is quite spectacular. With its endangered status and role of disseminating native seeds, this bird plays an important role in the conservation of native flora of this area.
