Meet one of Colombia's most elusive and celebrated varieties — the Yellow Colombia, a rare mutation of the classic Colombia cultivar, prized by specialty roasters for its exceptional cup quality and striking golden cherry. Sourced directly from Liliana Caballero at Hacienda Casablanca in the Santander highlands, this is genuine direct trade: transparent, traceable, and built on a relationship with the farmer.
Grown at 1,550 metres above sea level and processed through Natural Anaerobic Fermentation, the beans undergo a slow, oxygen-free fermentation that amplifies their natural sugars and unlocks extraordinary complexity. The result is a vibrant, fruit-forward cup bursting with tropical fruit notes, blackberry, and cacao — exotic, expressive, and deeply satisfying from the first sip to the finish.
Locally roasted in small batches in-house at our Adelaide roastery, every bag is a direct link to the farm, the farmer, and the land. The Yellow Colombia is a rare find — when it's gone, it's gone.
