What Four Kilo Fish Coffee say

Villa-Sarchi is a compact Bourbon mutation first discovered in the small town of Sarchí in Costa Rica’s West Valley during the mid-20th century. Known for its short stature, wind resistance, and exceptional cup clarity, the variety quickly became valued across Central America for both its resilience and elegant flavour profile. In the cup, Villa-Sarchi often presents delicate florals, bright sweetness, silky texture, and a refined, tea-like finish. The variety was gradually introduced to Yunnan in recent years as local producers began exploring more diverse cultivars suited to high-elevation terroir and experimental processing.

Our good friends Ye Ping and her husband from Tian Yu Coffee Co-Op began carefully cultivating Villa-Sarchi seedlings several years ago, and the first meaningful harvest arrived last year. Their washed Villa-Sarchi has an incredibly syrupy mouthfeel, feels like honey water carrying fragrant sweetness across the palate. The coffee itself tastes rich and silky, reminiscent of almond milk, yet remains remarkably soft, light, and clean.
