What ST. ALi say

Inspired by the son who never stopped believing, this blend is bright and unwavering. Jasmine and honey open into stone fruit, carried by a silky, sparkling finish of rare clarity. Coffee for the moment you finally come home.

The Light Side Blend reveals a brighter side of the Force. White peach and bergamot lead with vibrant citrus acidity, while jasmine florals and honey bring sweetness and balance, creating a refined espresso with a clean, tea-like finish and rare clarity.

Bright and expressive as espresso, the Light Side Blend also shines through a plunger or stovetop brewer. Best enjoyed black or with just a touch of milk, allowing its peach, citrus and delicate floral character to remain in balance. A lighter path, with plenty of character.

The Light Side Blend rewards precision. If your shot runs too fast and tastes thin, grind finer. If it runs slow and tastes bitter, go slightly coarser. Aim for a steady pour from around the 8-second mark. Pull toward the longer yield (52g) to reveal more of its vibrant citrus, peach and floral character, or shorter (46g) for greater sweetness and body. Find the balance, and let the brighter side of the Force come through.

Fill the basket level and don't tamp, as this can lead to over-extraction and bitterness. Brew over medium heat and listen closely. As soon as the coffee begins to bubble and sputter, remove it from the heat to preserve its bright fruit sweetness and delicate acidity. Get the balance right and notes of peach, citrus and honey will shine through—the lighter side of the Force in every cup.

Pour enough water to saturate the coffee, give it a gentle stir and allow it to bloom for 30 seconds. Top up with the remaining water, place the lid on without pressing, and steep for 4 minutes. Press slowly and serve immediately to avoid over-extraction. Expect a bright, refined cup with notes of white peach, bergamot and honey, delicate jasmine florals and a clean, tea-like finish that stays firmly on the light side.

When taking the Light Side Blend with milk, lighter is the way. Skim or almond milk allows its peach, citrus and honey sweetness to remain present without masking the delicate florals and vibrant acidity. Best kept short as a piccolo or small flat white to maintain balance.

The Light Side Blend sits at a medium strength, rated ●●●●○○○. Bright and expressive rather than heavy, it brings vibrant citrus acidity, peach and delicate florals to the cup, balanced by honeyed sweetness and a refined, tea-like finish. Proof that power doesn't always come from the dark side.

This separates strength from flavour intensity , which is exactly how a specialty coffee audience would interpret it.

The Light Side Blend brings together coffees from three origins: Colombia, Ethiopia and Kenya. Colombian washed coffee brings sweetness and structure, Ethiopian coffee adds jasmine florals, bergamot and stone fruit, while Kenyan coffee delivers vibrant citrus and blackcurrant character. Together they create a bright, refined blend with honeyed sweetness and a clean, tea-like finish—a coffee firmly aligned with the light side of the
