- brew guide: 18g coffee, 300g water. Pour 80g at 97°C, bloom 30s. Pour 70g at 97°C, wait 30s. Pour 80g at 88°C, wait 45s. Pour remaining 70g at 88°C. Allow all water to drain between pours. Stir before serving.
