The Castillo Aromatic is processed through a rare and experimental 2-Phase Extended Co-fermentation with Citronella and Lemongrass Juice, a pioneering technique that places this coffee firmly at the cutting edge of specialty coffee innovation.

Sourced directly from Liliana Caballero at Hacienda Casablanca in Santander, Colombia, at 1,550 metres above sea level, this is honest direct trade — transparent, traceable, and grounded in a genuine long-term relationship with the farm and the farmer behind it.

The Castillo variety, celebrated for its clean structure and consistency, is transformed through two distinct fermentation phases. In the second phase, fresh citronella and lemongrass juice are introduced — imparting a hauntingly aromatic quality that carries through from the first pour to the last sip. The result is a cup of extraordinary character: aromatic lemongrass brightness, delicate floral elegance, and a lush, exotic lychee sweetness — fragrant, refined, and unlike anything else in specialty coffee.

Locally roasted in small batches in-house at our Adelaide roastery on a Medium Omni-Roast profile, this coffee excels as a cold brew, filter, long black, or espresso — the aromatics sing across every method.
