A bold and expressive passionfruit coffee from El Vergel Estate — vibrant, tropical and crafted through generations of Colombian coffee innovation. This co‑ferment showcases the estate’s signature approach to flavour development, delivering a cup that’s sweet, juicy and unmistakably fruit‑forward.

The Story: A Family Legacy Reimagined

These coffees are cultivated by Colombian coffee farmers across Tolima, Huila and Caldas. Depending on the harvest season, cherries are sourced from these regions to ensure the freshest crops before being transported to El Vergel Estate for processing.

The estate’s agricultural journey began in 1995, with coffee cultivation starting in 2010 and the first varietals harvested by 2015. In 2017, after facing challenges in the local market, Martha, Shady and Elias began exploring new ways to add value to their coffees and strengthen the connection between producers and roasters.

This led to the creation of Forest Coffee in 2019 — a project focused on innovation, education and sustainability, with a mission to connect growers directly with international markets through transparency and fair pricing.

This passionfruit coffee is produced through a meticulous, flavour‑driven process:

- Hand‑sorted cherries to remove defects

- 24‑hour pre‑fermentation in plastic bags

- 24 hours of fermentation in cherry

- Depulping, followed by

- 5‑day anaerobic co‑fermentation with mucilage, yeast and passionfruit flavour

- 10 days of mechanical drying for even moisture

- 5‑day stabilisation in GrainPro bags

The result is a juicy, tropical cup with exceptional sweetness and clarity.

The El Vergel Passionfruit is a favourite for its solubility. Whether you prefer a delicate filter or a punchy espresso, follow these parameters:

Tip: Use a slightly coarser grind to highlight the sparkling pomegranate acidity and floral finish.

Tip: This coffee creates an incredibly aromatic crema. If the passionfruit feels too "sharp," push your extraction time to 33 seconds to pull more of the brown sugar sweetness.
