In Guacacallo, Huila, Jon Jader carefully cultivates his farm with a focus on clarity, sweetness, and the pure expression of each varietal. Growing selections such as Wush Wush, Gesha, Yellow Bourbon, Pink Bourbon, and SL28, his approach highlights both precision in processing and respect for terroir.For this Wush Wush lot, cherries are meticulously handpicked and sorted before undergoing an initial air-drying stage to reduce moisture to around 30%.
The coffee is then sealed in airtight drums for an 80-hour fermentation, allowing complexity and intensity to develop in a controlled environment. Following fermentation, the coffee is slowly dried on raised beds to a final moisture content of 11%, stabilising the structure while preserving delicate aromatics.The resulting cup is strikingly expressive, defined by a candy-like sweetness and layered forest berry notes. Juicy and refined, it delivers both vibrancy and depth, with a clean and elegant finish that reflects the precision behind its processing.
