Caturra Nitro is the result of Café UBA’s signature Nitro Washed fermentation, an innovative technique developed in-house. In this process, coffee is fermented inside a bioreactor with a mix of fruit must, starter cultures, and culturing lixiviates, while the oxygen inside the reactor is replaced with nitrogen to create a modified atmosphere. Throughout the fermentation, key variables such as temperature, pH, and Brix levels are carefully monitored and kept within optimal ranges defined through our own research. The result is a clean, precise cup with layered complexity and vibrant character.

Julio Cesar Madrid directs the joint farms Finca La Riviera and Finca Milan, first cultivated by his ancestors more than forty years ago. Alongside business partner and master processor Andres Julio Quinceno, Julio has devoted his life's work to producing exceptional coffees through innovative, exacting processing. This Caturra lot — fermented anaerobically with a nitrogen injection technique unique to the farm — beautifully showcases both of those pursuits in tandem.
