This Pacamara natural lot is produced by Julio Cesar Madrid, a third-generation coffee grower based in the Risaralda region of Colombia, near Pereira. The coffee comes from Finca Milán, located in Vereda El Hogar at around 1,600 MASL, close to the Los Nevados National Park. The farm benefits from a stable climate with temperatures between 18–28°C and rich volcanic-influenced soils, creating ideal conditions for slow cherry maturation and complex cup development. Julio Madrid is known for focusing on rare and high-quality varieties such as Pacamara, Sudan Rume, and Laurina, and is part of the Café UBA group, a collective of progressive farms dedicated to specialty coffee production.
This lot is a natural-processed Pacamara, where only fully ripe cherries are selectively handpicked and dried with the fruit intact, allowing sugars to develop and intensify during drying. This process enhances body and sweetness, contributing to the coffee’s rich and structured profile. The combination of high elevation, careful variety selection, and controlled natural processing results in a cup with deep cocoa richness, molasses-like sweetness, and roasted almond notes, showcasing both the density of Pacamara and the precision of Julio Madrid’s processing approach.
