Very low acidity, a huge thick body and a chocolaty finish with light savoury spice notes
Grown and processed on India's Malabar coast, the natural sun-dried beans are stored in open-sided warehouses to be seasoned by the moist tropical monsoon winds. Over a period of 2-3 months, the beans absorb moisture and swell to almost double their original size while losing some of their natural acidity, producing some of the highest-quality coffees in India.
This process replicates coffee's journey to market on long voyages under sail in the 19th Century.
