This is our fourth year buying this Anaerobic processed Yellow Catucai; expect big complex sugary sweetness with a touch of bright citrus and pineapple candy.
Area: Nepomuceno, Mantiqueira de Minas
Fazenda Bela Vista has been in the Lima Reis family for 110 years. This fourth-generation estate is south of Minas city and spans 1000 hectares, growing many cultivars, including this new Icatu (Robusta cross Yellow Bourbon) cross Yellow Catuai, called Yellow Catucai.
This lot begins with first having 48 hours in closed bags in the shade, after which, the cherry is taken to the patio and dried for 3 days, with a further three days in static boxes. Lastly, the beans rest for 15 days and are placed in the rotative dryers to complete the drying process.
This is our fourth year buying this coffee, the anaerobic processing keeps high clarity and sweetness; expect big complex sugary sweetness with a touch of bright citrus and pineapple candy.
