Noralba Benítez is a highly respected Colombian coffee producer, renowned for her unwavering commitment to quality. Between 2021 and 2023, she received multiple local and national awards, establishing her as a benchmark in the specialty coffee sector.
During harvest, only perfectly ripe cherries are hand-selected, with careful attention given to avoiding under ripe fruit. The coffee then undergoes a controlled 24–36 hour fermentation in sealed containers, enhancing clarity and complexity in the cup. It is subsequently depulped, washed, and density-sorted to remove floaters before being sun-dried, resulting in a cup that beautifully represents the classic, clean, and balanced character of Colombian coffee.
