An exceptional exotic microlot from Diofanor Ruiz at La Divisa in Buenavista, Quindío, showcasing the remarkable character of the Java variety.
This coffee is intensely aromatic and fruit-forward, opening with vibrant blueberry sweetness, delicate floral notes and a bright lime-like acidity. As it cools, deeper molasses sweetness comes through, creating a rich, silky body and a long, complex finish.
Although named Java, the variety traces its genetic roots back to Ethiopia and is known for producing elegant, floral and high-quality cup profiles often compared with more celebrated exotic varieties such as Gesha. Diofanor first planted Java at La Divisa in 2022 using seeds shared by Cofinet, carefully nurturing the trees for three years before producing this remarkable first harvest.
Only the ripest cherries are selectively hand-picked before being carefully sorted and floated to remove underripe or defective fruit. The cherries then undergo a controlled 45-hour aerobic fermentation designed to highlight the coffee’s natural characteristics, before being slowly dried in parabolic dryers for 10–15 days.
The result is a beautifully expressive and distinctive coffee with intense fruit, refined florals, vibrant acidity and deep sweetness — a rare and exciting representation of Java grown high in the mountains of Colombia.
