What Change Coffee say
This 100% Chiroso microlot was produced by Edward Sandoval on his farm, Canta Ranas, set on the foothills of the Los Nevados active volcano and national park, near the small town of Santa Isabel in northern Tolima, Colombia.
Image supplied by Melbourne Coffee Merchants: The rolling hills of Santa Isabel, a landscape defined by altitude, cool temperatures and lush vegetation.
Fragrant orange blossom, complemented by butterscotch on the finish, with notes of finger lime, passionfruit and black tea.
Edward Sandoval is one of those rare producers whose life has been shaped entirely by coffee. Raised in Santa Isabel, Edward spent decades working as a quality control cupper and technical advisor with Colombia’s National Coffee Federation before returning home to establish Canta Ranas in 2015. Today, Edward and his family live on the farm, where quality is intentional and exacting, from careful cherry selection to slow, controlled drying on parabolic beds. A sample roaster and small cupping lab on site ensure every lot is tasted, adjusted and refined before it leaves the farm.
