The Worka Cooperative operates the Halo Fafate Washing Station in Yirgacheffe, which serves around 900 small holder farmers in the area. And by 'small holder', we really do mean small! These farmers own on average between 1/2 to 1/8 hectare - about the size of a small garden. Cherries are then delivered straight to the washing station for processing, which is why a well-run station is so important to small holders; cherries will be dried on raised beds and processed consistently. Expect delicate Bergamot & tangy citrus with delicious creamy texture.
