From La Flecha, this lot is 100% Castillo, a varietal born from 20+ years of research by the Federación Nacional de Cafeteros de Colombia (FNC). Representing 500,000+ small-scale farming families, the FNC designed Castillo to combine disease resistance and high yield with outstanding cup quality.
Pulped cherries undergo 35 hours of dry fermentation, then dry on raised beds for 11 days to 10% moisture. The cup features notes of grapefruit, guava, and caramel.
