"Colombia Carambolo undergoes a meticulous three-stage process to ensure exceptional quality and complexity.
This week only, we're pouring something special. Carambolo comes from the high slopes around Bruselas, in Colombia's southern Huila. A region whose altitude and cool mountain nights quietly produce some of the most elegant coffee on earth. Named after the carambola, or star fruit, it's a regional release that brings together the season's best cherries from growers across the district, carefully selected and processed by the team at Lohas Beans. Grown between 1,780 and 1,900 metres, it's the kind of coffee that rewards slowing down for.
It's a washed coffee done properly. Cherries are sorted and cleaned the moment they arrive, rested for a full day to build sweetness, then gently de-pulped, washed and dried under careful control, a patient approach that lets Huila's natural fruit shine without anything getting in the way. The result is bright, juicy and beautifully balanced: soft florals on the nose, a rounded honey sweetness, and a clean note of ripe apricot through the finish. It's lovely as filter and sweetly forgiving as espresso but only for one week, so grab a bag while it's here.
