Sakoko is a carefully selected micro-lot from the highlands of Ermera, composed of Catimor, Caturra, and Typica. True to Timor-Leste’s long-standing traditions, the coffee is shade-grown and organically farmed by smallholder producers.
Cherries are hand-picked and processed naturally on the same day, dried slowly on raised tables and patios to preserve sweetness and aromatic complexity. Once optimal moisture is reached, the coffee is delivered to the Railaco Station, where it undergoes meticulous milling, density and colour sorting, and final hand-sorting to ensure clarity and consistency in the cup.
