Strawberry - Jam - Date

The Honey Processed is the biggest character in the room, and with good reason. Mother Nature fruits us coffee as two seeds in a cherry, and very often we toss that cherry and ferment the seeds. With the Honey Process, some of that cherry has been left in the mix to ferment with the seeds before being washed and dried. Sidenote: did you know coffee beans are actually seeds? Doesn’t quite have the same ring to it, though, does it? Anyhoo, it’s this fermentation with the cherry’s flesh that leads to the big, bolstered flavour notes in our cup of joe. Imagine your favourite song, just with the volume turned up!
