Pony is Clement’s evolving ode to seasonality and unexpected origins. Featuring fresh components that spotlight emerging producers and underrepresented regions, this current iteration brings together 50% Timor-Leste and 50% Honduras. The Honduras component offers mild dried fruit, molasses, and a grounding note of black pepper, while the Timor-Leste lot lifts the blend with soft red apple acidity and syrupy maple sweetness.

Together, they strike a balance between depth and clarity. It’s round, sweet, and structured—built for espresso, excellent with milk, and surprisingly good as filter. If you've got a Moccamaster or a V60 at home, give it a go.
