What Little Fish Coffee Roasters say

22g in, 46ml out, 27-30 sec - ratio 1 : 2.1 (so Breville/ Sunbeam are approx. 33ml out).

Ipé Amarelo is a native Brazilian tree that sheds its leaves before bursting into vivid yellow, trumpet-shaped flowers at the start of winter—a natural signal to coffee farmers that flowering season is about to begin. The splash of gold across green coffee fields beneath a clear blue sky mirrors the Brazilian flag itself, earning the Ipé Amarelo a cherished place in Brazil’s story.

Yellow Bourbon coffee echoes this same beauty, with cherries ripening to a bright yellow against lush green foliage. First discovered in 1930 near Pederneiras, São Paulo, this natural mutation of Red Bourbon is prized for its intense aroma, elevated sweetness and lively citrus acidity when grown with care.

Ipé Amarelo Yellow Bourbon is sourced from small grower collectives across three standout regions—Alta Mogiana, Cerrado Mineiro and Sul de Minas. Cherries are hand and mechanically harvested as conditions allow, then carefully sorted, floated and patio-dried to optimal moisture. Only lots meeting strict physical and sensory standards earn their place in this blend—bright, balanced and unmistakably Brazilian.
